
Welcome to Cookin with Ables. Today we are making a sandwich that is a rich, salty, and comforting dish and pretty easy to make.
The highlight of this club is the goat cheese; its creamy texture and salty taste helps soften the crunch of the toasted bread and cut the sweetness of the roasted red bell peppers.
This recipe comes from my favorite cook book, Southern Living, but I’ve added my own little twists.
Sprinkle chicken with salt and pepper (or other seasonings or rubs that you like). Grill the chicken for about 10 minutes on each side or till it’s done. Let sit for about 10 minutes before cutting into ¼ inches or about the size of your pinky finger.
Spread home made pesto (or store bought but home made is better) on 1 side of each bread slice.
Layer 4 bread slices, pesto side up, with chicken, goat cheese, and roasted red bell pepper slices.Top with 4 bread slices, pesto side up; layer with tomato, bacon, salad greens, and add a drizzle of balsamic vinegar. Top with remaining 4 bread slices, pesto side down.
Cut sandwiches into quarters or however you like.
